Chicken Shashlik

Shashlik Ingredients


  • 1 kg boneless chicken breast ( cubed )
  • 2 onions
  • 4 tomatoes
  • Capsicum as required
  • 1 tablespoon red chili powder
  • 1 tablespoon salt or to taste
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1/2 cup soya sauce
  • 1/2 cup yogurt 
  • 2 tablespoon lemon juice
  • 2 tablespoons oil


Sauce Ingredients

  • 2 tablespoons tomato pulp
  • 1 tablespoon vinegar
  • 1 teaspoon soya sauce
  • 1 teaspoon red chili powder
  • salt to taste

Directions


  1. Marinate chicken cubes with lemon juice, yogurt, soya sauce, garlic and ginger paste, salt, red chili powder, cumin and coriander for about 1 1/2 to 2 hours then cut tomatoes, onion and capsicum into pieces
  2. After marination put chicken into a pan and fry it with tomatoes, onion and capsicum until cook. Remove chicken when ready then add all sauce ingredients with little oil and mix well and cook it until ready
  3. Now place chicken in sticks with vegetables as shown in the picture and serve it with sauce

( This recipe directed to make chicken shashlik separated with sauce , if you want to make it shashlik and sauce together so you can increase the quantity if sauce ingredients as per chicken quantity and you can add all sauce ingredients with frying checked and vegetables )

Chicken Shawarma

serve 6 to 8

Ingredients :


  1. 1 kg boneless chicken ( cut into stripes )
  2. 1 cup plain yogurt
  3. 1/2 cup lemon juice
  4. 1 teaspoon black pepper
  5. 1 cup mayonnaise
  6. 1 teaspoon garam masala ( hot spices )
  7. 2 chopped garlic cloves
  8. 2 tablespoon vinegar
  9. 1 teaspoon red chilli powder
  10. 1 cup cheese
  11. 1 tablespoon mustard paste
  12. 1/2 teaspoon cardamon powder
  13. 1/2 teaspoon cumin powder
  14. 1 sliced onion
  15. Tomato finely sliced ( as per need )
  16. 1 cup oil
  17. 1 cabbage
  18. 1 capsicum
  19. Salad leaved
  20. Salt to taste
  21. Fresh long shaped burger or paratha ( if burger is not available )

Directions :


  1. In a large bowl marinate boneless chicken pieces with black pepper, vinegar, salt, cardamon powder, lemon juice, garam masala, mustard paste, garlic cloves, red chilli powder, cumin powder and yogurt for about 2 to 3 hours.
  2. In a large saucepan cook marinated chicken for about 25 to 30 minutes or until cooked. If chicken become dry while cooking then add half cup or water more through out cooking duration.
  3. In a bowl mix cheese, mayonnaise, black pepper and mix it well to make sauce
  4. Now take a paratha or a burger aside, put layer of mayonnaise sauce and add cooked chicken over it with few slices of tomato, onion and capsicum then add 2 table spoon of chopped cabbage
  5. Delicious chicken shawarma is ready to eat.

Chicken Roll

Ingredients :


  • 250g boneless chicken
  • 1 tablespoon salt
  • 1 tablespoon curd
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • Tomato ketchup as per desire
  • 1 teaspoon red chilli powder
  • 1 teaspoon crushed black pepper
  • 1 teaspoon cumin ( zeera )
  • 1 teaspoon garam masala powder ( hot spices powder )
  • 2 small onions
  • 4 green chillies or as desired and 1 lemon
  • Oil to fry

Directions :


  1. Make chicken cut into small 1 inches cubes and marinate it with the mixture of salt, curd, ginger and garlic paste, red chilli powder, crushed black pepper, cumin and garam masala powder, for half an hour.
  2. Heat the oil, plunk the chicken and stir till cooked properly
  3. Slice onions and green chillies and fry them in remaining oil until they become soft and little brownish as in the picture.
  4. Layer chicken pieces, fried onions and chillies on paratha ( if you dont know how to make paratha you can use ready made paratha , easily available in market )
  5. Drop some lemon juice as per your taste then roll it and tuck into a piece of tissue paper or butter paper to hold it as it could be hot.
  6. Your chicken roll is ready to eat .

BBQ Chicken Pizza

Ingredients:


  • 3 boneless chicken breast halves, cooked and cubed
  • 1 cup hickory flavored barbecue sauce
  • 1 tablespoon honey
  • 1 teaspoon molasses
  • 1/3 cup brown sugar
  • 1/2 bunch fresh cilantro, chopped
  • 1 (12 inch) pre−baked pizza crust
  • 1 cup smoked Gouda cheese, shredded
  • 1 cup thinly sliced red onion

Directions :


  1. Preheat oven to 425F.
  2. In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.
  3. Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.

Chicken Nuggets

Ingredients:

 

  • 2 boneless skinless Chicken Breasts
  • 1 teaspoon of Salt
  • 1/2 teaspoon of Parsley flakes
  • 1/2 teaspoon of Oregano
  • 1/4 teaspoon of Onion powder
  • 1/4 teaspoon of Pepper
  • 2 Eggs, beaten
  • 1 Cup of Flour 
  • About 1.5 Cups of Oil for frying

Directions :

 

  1. Heat oil in a heavy-duty skillet (like a cast iron skillet) on medium-high heat while preparing the chicken nuggets – it should be ready to work with once half of your nuggets are ready to go in.
  2. Cube chicken and place in a food processor. Blend chicken until it has all been taken apart and is a fine paste. Remove to a bowl and add salt, parsley, oregano, onion powder, and pepper, and combine well.
  3. Pour out flour on a plate and have your beaten eggs in a small bowl ready to work with.
  4. Roll the chicken paste mixture into 34 ping-pong ball-sized balls (smaller than a golf ball).
  5. Roll ball a “chicken ball” in flour, then in egg, and then in flour again. Then, press the ball down to make a nugget.  Set nuggets aside.
  6. Sprinkle the hot oil with some flour and if it bubbles really quickly right away, your oil is ready for frying. Place as many nuggets as possible in the oil, and fry until the bottoms are golden, turn and fry until the other side is golden. Will take about 4-5 minutes per side. Remove to a towel-lined plate (to catch any excess oil).

Chicken Steaks


Ingredients

  • Chicken 300 gm (boneless)
  • Capsicum 1 (diced)
  • Onions 1 (diced)
  • Oil 2 tbsp
  • Salt as required
  • BBQ steak as required
  • For Garnishing:
  • Salad Leaves 3 – 4
  • Tomatoes 2 – 3

Directions

  1. Cut the boneless chicken into small cubes.
  2. In a mixing bowl add the bbq masala, ginger garlic paste, lemon juice, corn flour, oil and salt.
  3. Mix well then add the chicken pieces, capsicum and onions.
  4. Marinate the chicken pieces for half an hour.
  5. Thread the chicken pieces on the skewers, alternating with the diced capsicums and onions.
  6. Thread all the skewers this way.
  7. Now heat in a microwave at 100% for 6 minutes.
  8. Serve with lettuce leaves and sliced tomatoes.

Alternate : Add some oil in pan and make it fried if microwave is not available

Mexican Chicken Casserole

Ingredients:


  • 6 chicken breasts, boneless
  • 10 oz. Velveeta cheese
  • 1 can cream of mushroom soup
  • mixed with 1 cup milk
  • 1 can Rotel tomatoes
  • 1 bag Doritos tortilla chips

Directions:

 


1. Boil chicken until cooked throught.Cut into bite sized pieces.
2. Combine Velveeta, soup mixture and tomatoes; bring to a boil.
3. Add chicken and simmer 5-10 minutes, stirring often.
4. Place a layer of Doritos in long casserole dish, then add a layer of the chicken mixture.
5. Add another layer of chips, another layer of the chicken mixture, ending with chips on top.
6. Bake at 350 degrees F for 30 minutes.


Cheesy Chicken

Ingredients:


  • 4 boneless, skinless chicken breasts
  • 4 slices American or cheddar cheese
  • 1 can cream of chicken soup  
  • 1/4 soup can water
  • 2 cups cooked Stove Top stuffing

Directions:


1. Place chicken in baking dish. Layer cheese on top.
2. Mix soup and water, place on top of cheese.
3. Spread stuffing on top. Bake uncovered at 350 degrees for 45 minutes or until chicken is no longer pink inside.


Chicken Stuffing Casserole

Ingredients:


  • 4 whole chicken breasts, boiled
  • 2 cans cream of chicken soup mixed with 1 cup chicken broth
  • 3/4 to 1 pound Swiss cheese, thinly sliced
  • 1/2 cup butter
  • 2 cups Pepperidge Farm stuffing

Directions:


1. Chop chicken up into bite-size pieces.
2. Layer in bottom of 13 x 11-inch baking dish.
3. Pour soup mixture over chicken. Cover with cheese slices.
4. Melt butter and mix into stuffing. Spread the stuffing mixture over the cheese.
5. Cover with foil and bake for 10 minutes at 350 degrees F.
6. Remove foil and bake 15 minutes longer.


Baked Crispy Chicken

Ingredients:


  • 1 chicken, cut into pieces
  • 1 cup cornflake crumbs (unsweetened)
  • 1/2 teaspoon ground pepper
  • 1 teaspoon salt
  • 1/2 cup evaporated milk, undiluted

Directions:


1. Preheat oven to 350F.
2. On a sheet of wax paper combine the cornflake crumbs, salt and pepper.
3. Place evaporated milk into a shallow bowl and dip the chicken in it,  then roll in seasoned crumbs.
4. Place chicken skin side up, in a baking pan.
5. Bake uncovered for 1 hour, or until cooked through.


Thyme Chicken Breasts

Ingredients:


  • 4 boneless chicken breasts
  • 1 stick butter
  • Thyme
  • sliced fresh mushrooms
  • 1/2 pint whipping cream
  • Salt & pepper to taste

 Directions:


1. Melt stick of butter in skillet.
2. Fry chicken in butter until golden brown.
3. Remove chicken from skillet and sprinkle with thyme.
4. Saute mushrooms in butter in skillet.
5. Return chicken to skillet with mushrooms. Pour cream over chicken and mushrooms.
6. Cook until cream thickens and browns.

Chicken Cheese Cups

Ingredients


  • Spring onions 2 table spoons ,
  • cabbage chopped finely 2 table spoons,
  • Yogurt 6  table spoons,
  • Half cup Cheese finely grated,
  • 1 Egg. ,
  • Boiled chicken cut into small fine pieces.
  • Salt ,black pepper according to taste.
  • ajino moto ( chinese salt ) a pinch.
  • Samosa strips each cut into three equal squares(are available easily in market).
  • this recipe needs a pastry baking tray with six or so cups in it.

Cooking Directions


  1. Cut each rectangular shape samosa strip in three equal squares.
  2. Now apply oil on the base of each pastry cup in a baking tray.
  3. Place one square of samosa on the other sqaure such that the angle of one comes right in the middle of one side of other.
  4. Keep applying oil between the samosa squares.
  5. Place three samosa squares on the top of each other such that it gives you a floral shape .
  6. Now mix rest all the ingredients .
  7. Put 1tbsp of this paste in each floral samosa cup .
  8. Put a drop of tomato sauce in the middle to beautify.
  9. Bake in the oven at 150 C for 20 mins.
  10. Keep checking with fork if the mixture has cooked and cup turn light golden .
  11. Serve hot with tea.
