Lasagna ( Lazania )

Ingredients :


  • 1 tablespoon olive oil
  • 2 cloves chopped garlic
  • 1 diced onion 
  • 1 handful parsley (chopped)
  • 1 tablespoon balsamic vinegar
  • 2 cups cooked and shredded chicken
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon oregano
  • salt and pepper to taste
  • 1 1/2 cups cheese
  • 3 large roasted red pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups diced tomatoes
  • 1 tablespoon tomato paste
  • 1 cup crumbled feta
  • 1 cup grated mozzarel
  • 6 lasagne noodles
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk

Directions :


  1. Heat the oil in a pan over medium heat then add the onion and saute until tender, about 5-7 minutes.
  2. Add the garlic and red pepper flakes and saute until fragrant, about 1 minute then add the tomatoes, tomato paste, balsamic vinegar, oregano, salt and pepper and bring to a boil.
  3. Reduce the heat and simmer until the sauce starts to thicken, about 15-20 minutes then mix in the chicken and parsley and set aside.
  4. Start cooking the noodles as directed on the package. Heat the butter in a saucepan over medium heat until it is bubbling and it has turned a light golden brown. Mix in the flour and let simmer until it returns to a light golden brown.
  5. Mix in the milk, nutmeg and goat cheese and heat until it thickens.
  6. Lightly grease the bottom of an 8 inch square baking dish and place a layer of noodles-followed by 1/2 of the tomato sauce followed by 1/2 of the feta followed by 1/2 of the roasted red peppers followed by 1/3 of the bechamel sauce. 
  7. Repeat a second layer in the same fashion and top with a final layer of noodles, the remaining bechamel sauce and top with the mozzarella.
  8. Bake in a preheated 350F oven until the top is golden brown and the sides are bubbling, about 30-45 minutes.

Macaroni

Ingredients 


  • 2 cups macaroni pasta
  • 250g boneless chicken
  • 2 large tomatoes
  • 1 medium onion
  • 1 potato
  • 1 teaspoon chinese salt or to taste
  • Chopped coriander ( for garnishing )
  • Cheese ( for sprinkling )
  • 2 teaspoon coriander powder
  • 1 teaspoon red chilli powder or to taste
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon garam masala powder ( hot spices powder )
  • 1 teaspoon ginger paste
  • 10 cups of water

Directions :


  1. Boil chicken in water
  2. Boil macaroni pasta and add chinese salt in water while boiling it.
  3. Cut all tomatoes, potato and onion. Then heat oil in a pan and add onions to fry. Then add potatoes, ginger paste, turmeric powder and salt. Cover it to cook for few minutes. 
  4. Mix tomatoes in the frying pan and cook until the juice wilts from the tomatoes.
  5. Add red chilli powder and coriander with tomatoes and cook until tomatoes are done
  6. Add the mixture in boiled chicken and add macaroni pasta and adjust the seasoning
  7. Garnish with coriander and serve with sprinkle cheese

BBQ Chicken Pizza

Ingredients:


  • 3 boneless chicken breast halves, cooked and cubed
  • 1 cup hickory flavored barbecue sauce
  • 1 tablespoon honey
  • 1 teaspoon molasses
  • 1/3 cup brown sugar
  • 1/2 bunch fresh cilantro, chopped
  • 1 (12 inch) pre−baked pizza crust
  • 1 cup smoked Gouda cheese, shredded
  • 1 cup thinly sliced red onion

Directions :


  1. Preheat oven to 425F.
  2. In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.
  3. Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.
